Jaccard 200440 Safe Hands Madolin Slicer - 7 Blades Stainless Steel and CeramicThis elegantly designed mandoline looks and reads like it should work like a dream--gleaming stainless body, a nice little case for the vicious looking blades, and a huge food holder/hand protector, but the very features that are touted as making it the world's safest mandoline are exactly the things that make it inefficient and frustrating to use.

The spikes on the hand guard, while doing a great job of keeping the food stable, are so long that the cutting blades come in contact with the spikes before half of the vegetable is sliced.Using sufficient force to get the food over the blades jams the safety guard over the stops at the end of the cutting bed, and it becomes almost impossible to free. I didn't even attempt firmer vegetables, such as carrots or sweet potatoes.

My conclusion is that good mandolines are inherently dangerous.So suck it up, be careful, and get one that strikes a happy medium between too safe (like this one) and a trip to the ER.I'm still looking.
